Pizza Steel

The Dough-Joe® Pizza Steel™ baking sheets are heavy pre-seasoned 15" x 15" steel sheets (available in ¼”, 3/8”, and ½” thicknesses) that, given the right oven, yield results comparable to wood fired ovens in your home oven due to the incredible heat conductivity you get when baking on steel. Steel is especially useful for baking New York Style pizza in the home oven when (true) oven temperatures are between 525 and 600.
